Heavenly Pancakes!

Wow! That's the only word my mouth had time to say after taking my first bite of these pancakes. I got the recipe from here. I love google when it's helpful - and on the weekend it was very helpful! The kids wanted pancakes but I remembered that I'd used all the eggs! Oh dear! So I searched for an egg free recipe. to be honest - it took extra time to make them and it has different ingredients than normal pancakes - but it is WELL WORTH IT!


Egg-free Pancakes


2 cups plain flour, 1/4 cup sugar, 1 1/2 tablespoons of baking powder, 1/2 teaspoon of salt, 2 cups milk, 1/4 cup vegetable oil, 1/4 cup orange juice, 1/4 cup melted butter.


Sift together flour, baking powder, sugar and salt. In a separate bowl, whisk together milk, oil and orange juice. Combine dry and wet ingredients. Slowly add in the melted butter. Pour about 1/2 cup of batter into a hot nonstick pan (if you don't have non stick - make sure you regrease your pan EVERY time!). Cook until you see a few bubbles rise to the surface and it's dry around the edges, then flip over to cook the other side until lightly browned. Serve with butter and maple syrup or whipped cream and fresh fruit.


Or if you're like me - eat them for breakfast and lunch and then dessert the next night too (with icecream and maple syrup!).


I seriously would take the extra time and make this recipe next time. It's a bit more posh than our basic "Day to Day Cookery" recipe - but it's totally worth glamming it up for pancakes!!
